Easy Beet & Goat Cheese Bruschetta
ingredients:
- 1 loaf baguette sliced on diagonal
- 1 jar pickled beets {or beets of your choice}
- 1 T. olive oil
- 4 ounces cream cheese
- 4 ounces goat cheese
- basil for garnish
instructions
- After slicing your baguette, brush pieces with olive oil. Brown them under the broiler watching carefully. Remove to a wire rack to let cool.
Mix 4 oz. cream cheese and 4 oz. goat cheese.Place a good sized dollop on each bread slice leaving an area in the center for the beets.Add the desired amount of beets, and garnish with fresh basil.
