peppermint drizzle brownies




I came up with this recipe because I had leftover peppermint chips and chocolate chips from the holidays. 

Homemade brownies are the best, am I right? These remind me of Christmas and Starbucks peppermint mochas all in one. 

Two of my favorite things, chocolate and Starbucks.....

peppermint drizzle brownies

prep time: 15 minscook time: 20 minstotal time: 35 mins

ingredients:


  • 1/2 cup butter
  • 1/4 cup cocoa unsweetened cocoa powder
  • 2 eggs
  • 1 teaspoon vanilla
  • 1/2 teaspoon salt
  • 3/4 cup flour
  • 1/2-3/4 cup Ghiradelli peppermint chunks
  • 1/4 cup white chocolate chips
  • 1/4 cup semi sweet or milk chocolate chips
  • 1/2 teaspoon peppermint extract {optional}
  • 1/4 cup heavy whipping cream
  • 1/2 teaspoon baking powder

instructions:


  1. 1. Preheat the oven to 350 degrees. Spray a rectangular pan with nonstick spray. 
    2. In a small saucepan melt the butter. Whisk in the cocoa powder and set aside.
    3. In a mixer with a paddle attachment, beat the eggs. Add sugar, vanilla, and mix.
    4. Add the hot butter and chocolate mixture and mix well. 
    5. Add half of the peppermint chunks and half of both chocolate chips.
    6. In a separate bowl, mix the flour, salt, & baking powder. 
    7. Beat into the egg mixture gently.
    8. Spread in the prepared pan and bake for 20 minutes.
    9. In a small saucepan, bring the heavy whipping cream to a low boil. Remove from heat and add the remaining chocolate pieces and stir until combined. 
    10. Drizzle on the topping. 
    11. Let set before cutting.
    12. Enjoy!
