Most low carb, low sugar, no flour muffin recipes have always turned out flat to me. Flat in texture and flat in shape.
But these might be the best healthy blueberry muffins I have ever tried.
If you are looking for the ingredient Erythritol, I buy mine here. I have also used this and it tastes delicious too.

Healthy Blueberry Muffins {paleo/whole 30}
prep time: 10 minscook time: 25 minstotal time: 35 mins
ingredients:
- 2 1/2 cup Blanched almond flour
- 1/2 cup Erythritol (or any granulated sweetener) I buy mine on Amazon
- 1 1/2 tsp baking powder
- 1/4 tsp salt
- 1/3 cup Coconut oil (measured solid, then melted; can also use butter)
- 1/3 cup Unsweetened vanilla almond milk
- 3 large Egg
- 1/2 tsp Vanilla extract
- 3/4 cup to 1 cup Blueberries
instructions:
- Preheat the oven to 350 degrees F . Line a muffin pan with liners or spray generously with coconut oil.
- In a large bowl, stir together the almond flour, erythritol, baking powder and salt.
- Mix in the melted coconut oil, almond milk, eggs, and vanilla extract. Fold in the blueberries. Top with additional blueberries.
- Distribute the batter evenly among the muffin cups. Bake for about 25-30 minutes, until the top is golden and an inserted toothpick comes out clean.
