Cinco De Mayo Churro Cupcakes

Churros are the bomb. Nothing like a fluffy batter deep fried and sprinkled with cinnamon and sugar to get your cravings going. 

I am signed up to bring a dessert to a Cinco De Mayo party this year so I thought I would bring something churro related.

I needed to make a lot, and always wanting to save time, I opted for a boxed version.

Don't worry, even though they aren't completely homemade, they are still super tasty, moist, and full of flavor with the addition of a special topping. 

Trust me, you will want to make these year round!

I used this cake mix and this churro mix, as I couldn't find Churros at our grocery store. 

To go with the whole fiesta fun look, be sure to use bright cupcake liners in a mix of colors.





Semi Homemade Churro Cupcakes

Yield: 12

prep time: 5 Mcook time: 15 Mtotal time: 20 M

ingredients:

  • 1 box spice cake mix + the ingredients on the box.
  • Sugar + Cinnamon coating:
  • 1/2 stick of butter
  • 1/3 cup sugar
  • 3 teaspoons of ground cinnamon
  • Frosting:
  • 1 tub vanilla (or cream cheese) frosting
  • 1 teaspoon of ground cinnamon
  • 1 box churro mix, made using the instructions on the box.

instructions:

How to cook Semi Homemade Churro Cupcakes

  1. Bake your cupcakes according to the instructions on the box.
  2. Let fully cool.
  3. Dip the tops of the cooled cupcakes in the melted butter and then roll them in the cinnamon sugar mix. 
  4. Frost with your frosting using a Russian tip.
  5. Make your churros, or buy them store bought and put a slice on top of each cupcake. 
  6. Enjoy!

Chocolate chip skillet cookie

My kids love these skillet cookies. 

Topped with vanilla ice cream, it is a real treat. 

Chocolate chip cookies are my favorite too.

Served warm, this gooey treat is sure to be a hit for everyone. It makes a good dessert to share, so think about it next time you need to bring a dessert to a gathering. 



Chocolate Chip Skillet Cookie

Yield: 12
Author:
prep time: 10 Mcook time: 25 Mtotal time: 35 M

ingredients:

  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 sticks room temp .butter
  • 1 cup packed brown sugar
  • 1/2 cup white sugar
  • 2 large eggs
  • 2 teaspoons vanilla 
  • 3/4 cups milk chocolate chips
  • 3/4 cups semi sweet chocolate chips
  • 1/4 cup chocolate chips for topping

instructions:

How to cook Chocolate Chip Skillet Cookie

  1. Preheat oven to 375 degrees.
  2. Mix flour, baking soda, and salt and set aside.
  3. In a electric mixer, beat butter and sugars. 
  4. Add eggs and vanilla.
  5. Slowly blend in flour mixture until incorporated.
  6. Mix in chocolate chips.
  7. Spread batter evenly into a cast iron skillet.
  8. Top with remaining 1/4 cup chocolate chips, pressing into dough. 
  9. Bake for about 25 minutes and let rest for up to 30 minutes before serving. 
  10. Serve with a big scoop of vanilla ice cream. 
  11. Enjoy!

Earth day & why I thrift

If you know me, you know I like to thrift.

I love finding a diamond in the rough, an expensive item marked down to nearly free, and treasures that just need a little love.

But I also thrift because I think it is important to recycle and understanding this process is important.
I am also a big donator. I make trips monthly to my local thrift shop and donate. 

When you donate your clothing and household items, you are keeping those items out of landfills. 
Very little do items donated get tossed out. Did you know that they even recycle their plastic bags and cardboard boxes that donations come in. 

I buy everything from kitchen items, to clothing, to bags, and books at thrift shops.

A really long time ago I posted on shopping for furniture at thrift stores, and what to look for. If you are interested, you can read that here. 

This earth day I encourage you to take a Green pledge. Pledge to be more thoughtful towards our environment and take efforts to reduce your carbon footprint. I am joining the Greenworks Generation site in helping encourage others. Share your story here as well and take the pledge.  

If you walk through our home, every room has items from thrift shops or antique stores. 
The wooden totes below in our kitchen were both thrifted. 


This "tablecloth" was a denim Ralph Lauren sheet I found at a thrift shop.


For our daughters high school graduation, I painted a globe from a thrift shop with paint so everyone could sign it that attended her party.


 The wood tote below, as well as the breadboards were flea market finds. 


I get a lot of my white dishes from thrift shops, as well as wooden bowls.


 I even got our kitchen rug runner from Goodwill!

Friday favorites

I have some fun things for you for this weeks edition of Friday Favorites. I skipped over Friday favorites last week because I shared my Mothers Day tablescape with you all. In case you missed it, you can see it here.

Ok, fun stuff today. Clothes, furniture, sale alerts, you name it. Since I missed a week, we have a lot to catch up on.

Let's jump right in. 

Look very closely in this picture by Gal Meets Glam and you will see the cutest little light blue raffia covered glasses that are so sweet for sipping your lemonade and iced tea. So cute, must have. 


This lip treatment is a must. 

How I keep my teeth white. This, followed by this, and occasionally these. 

My funnier than funny friend Ashley, just launched a t-shirt line on Amazon. Go show her some love and pick up one of her adorable shirts. I need this one!

Now that the weather is warming up, but jackets might still be in order, pull on this stylish denim one for under $40! Jeans jackets go with just about anything, wouldn't you agree?

I much prefer fresh flowers over faux. But c'mon, tell me this doesn't look real! A must have for that pop of green in your kitchen.

Oh, this is exciting news I forgot to share! The flip house we did sold for 10 grand over asking! Woo-hoo! 

These modern wood and metal stools are a steal at almost 1/2 off!

This ottoman/coffee table is 70% off! So so good!

It reminds me of the one used in this room, which has been an inspiration to me for so long.

Copycat Levain Bakery Chocolate Chip Cookies

To be honest, I had never heard of the Levain Bakery before last week. 

But then I had the chance to try them and I was in love. 

They are giant cake like cookies with flavors like dark chocolate peanut butter cup, dark chocolate chocolate chip, and chocolate chip walnut. 

A box of 8 is $49, and they can be shipped to you!

I came home after trying them and decided I needed to make some. So I googled recipes and came up with my own version after tweaking a couple I found on the web. 

Here are how my copycat Levain Bakery chocolate chip turned out!

Copycat Levain Bakery Chocolate Chip Cookies

Yield: 24
Author:
prep time: 10 Mcook time: 15 Mtotal time: 25 M

ingredients:

  • 2 cups cold butter, chopped into small pieces
  • 2 cups brown sugar, packed tightly
  • 1 cup granulated sugar
  • 4 eggs, beaten
  • 2 teaspoons vanilla 
  • 3 cups cake flour
  • 3 cups white flour
  • 2 teaspoons cornstarch
  • 1 1/2 teaspoons baking soda
  • 1 1/2 teaspoons salt
  • 2 cups semi sweet chocolate chips
  • 2 cups milk chocolate chips

instructions:

  1. Preheat oven to 350 degrees.
  2. In a mixer, beat the cold butter, brown sugar, and white sugar until creamy.
  3. Add the eggs and vanilla and mix.
  4. Stir in the flours, cornstarch, baking soda, and salt. Mix until just combined. Do not overtax. 
  5. Stir in chocolate chips.
  6. Place big mounds on a cookie sheet using an ice cream scoop. You should only be able to get 6 cookies per large cookie sheet.
  7. Bake for 15 minutes until golden on top. 
  8. Let them set on cookie sheet for 10 min. before transferring to a rack.
  9. Enjoy!

how to set a table for Mothers Day

Hello and welcome!

Today I am joining some fabulous blogging friends to share with you are tips and tricks for making this Mothers Day a success. 

I always love to set a pretty table, each one being unique in it's own way.


This year I was inspired by these little blue pots I found at the dollar spot at Target. 

Usually when I am coming up a "theme" or color scheme, I tend to find one item that I know I want to use, and go from there in coordinating items.



I thought these little pots were so sweet and they are a great take home gift for each guest, planted with a succulent. 


I used a combination of white and navy plates, and added fun white and blue striped linen napkins.
I love the non fussy look of crumpled linen in a casual space like this.





Bright flowers in the center add a little punch of color.

modern art DIY

This project came to be because of a picture I saw on Instagram.


I fell in love with this modern piece of art and wanted one for myself.

Now, let me explain a little something about myself. 

I am impulsive. When I see something I want, sometimes I don't want to wait 2 weeks for it to arrive in the mail.

So I decided I would make my own. 

I first went to HomeGoods, TJ Maxx, World Market, Ross, and Target trying to find the right size frame, striking out at each store.

So finally I went to a local thrift store and voila, there it was for $3.99. 

Now that I had the frame, I needed a big blank canvas. I stopped in on my way home to the local dollar store and picked up a piece of white poster board for 50 cents. 

Once I was home I promptly went to sketching out my design with a pencil and a ruler.

When I had drawn out what I liked, I painted it all in with black craft paint. 

After it was dry, I popped it in my frame and voila.

I can't believe I only spent $4.49 on this entire project.
It just goes to show that art doesn't have to cost a fortune. 


I love the graphic punch it gives to this room.

Or, you could simply print this off and frame it! 


I am not an artist by any means, but it was fun to be able to pull off a piece in a matter of hours and actually like how it turned out!
